MUSKEGON, Mich. — May is International Mediterranean Diet Month. Dietitian Grace Derocha has a great healthy brunch idea made with ingredients found at the Muskegon Farmers Market.
MEDITERRANEAN FRITTATA
Ingredients
6 eggs
1/2 cup milk or milk substitute of choice
1/2 cup diced tomatoes
1/4 cup chopped kalamata olives
1 cup chopped spinach
1/4 cup crumbled feta
1 teaspoon salt
1 teaspoon oregano
1/2 teaspoon pepper
Instructions
Preheat oven to 400 degrees. Grease a 8 inch pie pan or quiche dish.
Whisk up eggs and milk until well blended. Add in remaining ingredients and mix well.
Bake for 15-20 minutes or until eggs are set. Serve warm. Enjoy!
