GRAND RAPIDS, Mich. — It's time to talk health with Cle Jackson from Blue Cross Blue Shield of Michigan.
Let's Talk Health Week is coming up June 11 through the June 16. The week focuses on our minority communities in West Michigan and the need for health awareness to play a larger role in their lives.
There are many events during Let's Talk Health week but one of our favorites is the #MIKidsCan Cook competition.

Nicole shared a prize winning fruit salsa and cinnamon tortilla chips from a previous week. It's the perfect kid-friendly recipe:
Prep - 15 m
Cook - 10 m
Ready In 45 m
INGREDIENTS
- 2 kiwis, peeled and diced
- 2 Golden Delicious apples - peeled, cored and diced
- 8 ounces raspberries
- 1 pound strawberries
- 3 tablespoons fruit preserves, any flavor
- 10 (10 inch) flour tortillas
- butter flavored cooking spray
- 2 tablespoons cinnamon sugar
DIRECTIONS
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Original recipe suggests you preheat oven to 350 degrees F (175 degrees C). Nicole cooked her "chips" in a toaster oven onsite at the event!
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.
