GRAND RAPIDS, Mich. — West Michigan’s largest Home & Garden show is back for its 41st season at DeVos Place on Thursday, March 5 through Sunday, March 8.
The show features gardens, exhibitors and five different free seminar stages -- including the Standard Kitchens cooking stage.
Chef Angus Campbell, of Angus Eats, a retired Grand Rapids Community College Secchia Institute for Culinary Education professor joined My West Michigan Tuesday to share the details of when he'll appear on stage this weekend and to show off a heart healthy meal you'll love!
Heart Healthy Smoked Shrimp and Scallop Noodle Bowls
Ingredients:
- 2 C. shellfish broth
- Sachet containing 2 ea. cinnamon sticks, 2 ea. slices of fresh turmeric, 4 ea. hawthorn berries and a sprig of rosemary.
- 4 oz. cooked noodles refreshed in boiling salted water
- 3 ea. smoked shrimp
- 2 ea. smoked scallops
- 1 ea. soy egg
- 1 oz. sliced radish
- 1 oz. sliced green onion
- 1/2 oz Thai basil
- Sriracha sauce, sesame oil and sweet soy for drizzling
- Pinch of black and white sesame seeds
Directions:
- Bring the broth to a boil with the sachet of spices and herbs.
- Remove from the stove and allow to infuse for ten minutes.
- Plunge the noodles in boiling salted water and strain well in a mess strainer.
- Place into noodle bowl and top with infused broth.
- Warm the scallops and shrimp in the remaining broth and top the noodle bowl with the shellfish.
- Garnish the top with the radish, egg, onion and basil.
- Sprinkle with the sesame seeds and drizzle with sesame oil, sweet soy sauce and sriracha chili sauce.
What kinds of spices and herbs are good for you though?
- Cardamom: antioxidant and blood pressure
- Thyme: powerful antioxidant
- Garlic: anti inflammatory, lowers LDL levels
- Hawthorn: lowers blood pressure, strengthens heartbeat
- Cayenne: antioxidant prevents blood clots lowers blood pressure
- Cinnamon: inhibits fatty acid release lowers bad LDL
- Fenugreek: powerful cardio-protective properties, good for the blood
- Rosemary: good fro the immune system improves circulation
- Coriander: contain natural antioxidants, beneficial in lowering cholesterol
- Ginger: natural anti-inflammatory, reduces cholesterol level
- Turmeric: increases blood circulation, prevents clots, lower bad cholesterol
- Basil: is a great antibacterial allowing good bacteria to thrive
- Cumin: improves digestion, inhibits diabetes
- Lemongrass: anti fungal and antibacterial
Here are some veggies that would be good to include in a noodle bowl if you want to mix things up.
- Asparagus contains vitamin B6 which can lower homocysteine, a form of amino acid that has been linked to heart disease.
- Bell peppers contain folate, another nutrient that can reduce homocysteine.
- Carrots are rich in carotenoids, which are powerful antioxidants that can combat free radicals that cause heart disease.
- Lycopene in Tomatoes has been proven to be effective in preventing heart disease.
- Broccoli has a high content of vitamin C, and it can make you less susceptible to both non-fatal and fatal heart diseases.
- Leafy greens are an excellent source of magnesium. According to a Harvard study, magnesium can lower risk of sudden health failure in women.
- Garlic contains phytochemical that boost immunity and protect the heart against diseases.
- Onions are a rich source of sulphur-containing phytochemical. These phytochemical can reduce cholesterol levels, and therefore, prevent heart disease.
- Potatoes are a high-potassium food, and they can help your body maintain healthy blood pressure.
- Squash has many nutrients that are beneficial to your heart health, including vitamin C, potassium, magnesium, and folate.
